This indicates that decomposition of olive oil begins. So, it is important to not heat olive oil past its smoke point.
Second, olive oil has different types, extra-virgin olive oil, fine virgin olive oil, refined olive oil and pure olive oil.
Extra-virgin oil is derived from the first pressing of olive.
Fine virgin olive oil is created from the second pressing of olive.
Refined olive oil is extracted from olive by chemicals.
Pure olive oil indicates olive oil which is a blend of refined and virgin olive oil.
And the smoke point of olive oil is not very clear. In general, the smoke point of olive oil ranges from 220-437℃.
And cold-pressed virgin olive oil should have the lowest smoke point of all forms of olive oil. Oxidation of extra virgin olive oil can occur at cooking temperature. So, I suggest not to use olive oil as cooking oil at high temperature.
